Chocolate Chip Cookies

I could only post healthy recipes for so long before I needed to make something that was just for enjoyment. I checked back through some recipes and found one for Chocolate Chip Cookies. This is exactly what I felt like having today, so we gave it a try and it turned out great.

Once again, the flour I used in this recipe is a gluten free all purpose flour that I got at Bulk Barn.

Chocolate Chip Cookies

Ingredients

  • 1/2 cup vegetable shortening
  • 6 tablespoons white sugar
  • 6 tablespoons brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/3 cup gluten free flour
  • 1/4 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Preparation

  1. Add shortening, white sugar, brown sugar, egg and vanilla in a bowl.
  2. Stir ingredients until thoroughly mixed.
  3. In a separate bowl, add gluten free flour, xanthan gum, baking soda and chocolate chips.
  4. Mix these ingredients together.
  5. Pour the dry ingredients from the second bowl into the first bowl.
  6. Stir all ingredients until thoroughly mixed.
  7. Place a teaspoon of cookie dough every 2-3 inches on greased or wax paper covered cookie sheet. Mixture should make roughly 30 cookies.
  8. Heat oven to 375°F and bake cookies for 9 minutes or until edges are lightly brown.
