Gluten Free Corn Bread Recipe

I read through a handful of corn bread recipes looking for one to adapt to gluten free before I made this. It turns out that most of them were almost identical. What we ended up doing was using the recipe and substituting gluten free all purpose flour and a teaspoon of xanthan gum instead of traditional flour. We felt it turned out rather well.

Corn Bread

Ingredients

  • 1 cup cornmeal
  • 1 cup gluten free all purpose flour
  • 1 tsp xanthan gum
  • 1 tbsp baking powder
  • 1/2 teaspoon salt
  • 3 tbsp sugar
  • 1 egg
  • 1 cup milk
  • 1/4 cup oil

Preparation

  1. Add all ingredients into a bowl.
  2. Stir just enough to mix.
  3. Pour into a 9 by 9 baking pan.
  4. Smooth mixture into pan until even.
  5. Bake at 425°F for 20 minutes or until top is lightly browned
