Two Bean Salad

We’ve had several extremely tasty recipes that weren’t strictly healthy over the last week, so I figured it was time to do a post about something that was good for you. On the up side, this one is also very delicious!

The original recipe for this salad, I believe was from Women’s World magazine. As with most of the recipes on the site, we’ve made a few changes to it.

Easy Two Bean Salad Recipe

Ingredients

  • 1 cup frozen corn kernels
  • 1 can black beans
  • 1 can white kidney beans
  • 1/3 cup oil and vinegar salad dressing
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 2 stalks celery
  • 2 green onions
  • 1/3 cup Parmesan cheese
  • Preparation

Preparation

  1. Oil or spray a frying pan.
  2. Heat frying pan to medium high heat.
  3. Add corn and cook for five minutes or until lightly browned.
  4. Add black and kidney beans.
  5. Cook for 2 minutes or until heated through.
  6. Add salad dressing, lemon juice and salt to a large bowl.
  7. Mix thoroughly until well blended.
  8. Add green onions, celery and heated corn mixture to bowl and mix thoroughly.
  9. Add Parmesan cheese and mix again.
  10. Vegan Substitutions

    If you have a Parmesan cheese substitute add that instead, but if that’s not available it isn’t a central ingredient and could be removed from the recipe.
