Vegetarian Stir Fry

A bowl of stir fried vegetables

This is a straight forward recipe for a stir fry. While it may not be complex, it does manage to get vegetables in to your diet. I’ve made this dish with various vegetable combinations, but I believe this combination is my favorite.

Vegetarian Stir Fry

Ingredients

  • 2 cups broccoli
  • 2 stalks celery
  • 2 carrots
  • 1 medium red pepper
  • 1 small onion
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ginger
  • 1/8 teaspoon cumin
  • 1 tablespoon soy sauce
  • 3 tablespoons hot water
  • 1/8 teaspoon sugar
  • 1/2 teaspoon corn starch
  • 3 tablespoons oil

Preparation

  1. Heat a large pan to medium high heat.
  2. Add oil to pan.
  3. Dice onion. Add onion to pan.
  4. Peel and slice carrots. Add carrots to pan.
  5. Slice celery. Add celery to pan.
  6. Dice broccoli. Add broccoli to pan.
  7. Add garlic, ginger and cumin to pan.
  8. Cook for 7 minutes.
  9. Dice red pepper. Add to pan.
  10. Cook for 3 minutes.
  11. Put the hot water into a small bowl.
  12. Add corn starch and sugar to hot water.
  13. Stir mixture until corn starch and sugar are dissolved.
  14. Add soy sauce.
  15. Pour mixture into pan with vegetables.
  16. Stir vegetables to ensure even coating.
  17. Cook for 5 minutes.
