Spicy Vegetarian Chili

A bowl of vegetarian chili

My friend Jim came up with a recipe for vegetarian chili that was different from mine this year. It uses different beans, different vegetables and tastes great.

Note: This recipe makes a rather hot chili, so if you like you like your chili milder, reduce the amount of chili powder and black pepper.

Spicy Vegetarian Chili

Ingredients

  • 2 19 ounce cans 6 bean medley
  • 2 19 ounce black beans
  • 2 tomatoes
  • 1 1/2 cups corn
  • 1 medium onion
  • 2 sweet red peppers
  • 2 banana peppers
  • salt
  • black pepper
  • 1 teaspoon cayenne pepper
  • 2 teaspoons chili powder
  • oil

Preparation

  1. Add oil to fry pot.
  2. Roughly chop onion. Add onion to pot.
  3. Cook for 5 minutes on medium low heat.
  4. Roughly chop red and banana peppers. Add peppers to pot.
  5. Cook for 3-5 minutes on medium low heat.
  6. Roughly chop tomatoes. Add tomatoes to pot.
  7. Cook for 3-5 minutes on medium low heat.
  8. Add six bean medley and black beans to pot.
  9. Add cayenne and chili powder to pot.
  10. Add corn to pot.
  11. Add salt and pepper to taste.
  12. Stir and simmer on medium low heat.
  13. Cook until beans have softened and consistency suits. (at least 1/2 hour)
